Hobart, New York · Catskill Mountains
1,080 Acres. Two Historic Farmhouses. First Season: May 2026.
The Farm
Blue Violet Farm sits in Delaware County, New York — rolling pasture, old-growth hardwood forest, eight thousand feet of Delaware River frontage, and more space than most people know what to do with. We know what to do with it.
We're building a world-record food forest and two of the most extraordinary farmhouse stays in the Northeast. Not in spite of the land — because of it. Everything here either feeds something else on the farm or earns its place in the landscape.
The dandelions are intentional.

Farm Stay
Two historic farmhouses on 1,080 acres of Catskill land — rent one or both. Together they sleep 25, making Blue Violet Farm one of the most extraordinary settings in the Northeast for family reunions, wedding parties, milestone celebrations, and group retreats. Old-growth forest, West Branch Delaware River frontage, a world-record food forest in progress, and two bald eagles named George and Martha nesting in the trees.
Your Host
Brian Dengler has lived in Delaware County for over 25 years. He knows this land the way you can only know a place you've spent decades in — the trails that go deepest into the old-growth forest, the best stretches of the West Branch for fly fishing, which mornings George and Martha are most likely to be working the thermals above the ridge.
Before managing Blue Violet Farm full-time, Brian served as a New York State Trooper. When he's not running the farm, he runs a woodworking shop out of the small red barn on the property — handcrafted wood signs, made here on the land. If you want something custom to take home from your stay, ask him.
He'll greet you on arrival and be available throughout your stay. Everything else, he'll sort out as needed.
Main House
A 19th-century Greek Revival farmhouse — stained glass transom windows, original hardwood floors, a working stone fireplace, and enough bedrooms for a proper gathering. Under thoughtful renovation and accepting bookings from May 7, 2026.

Guesthouse
The smaller of the two properties — a charming guesthouse with its own above-ground pool and full privacy from the main house. Ideal for a family or smaller group wanting the farm experience without the scale of the main house.

The land is yours for the duration of your stay. Here's what you'll find.
8,000 feet of river frontage. Fly fishing, tubing, and crystal panning — including personalized laser-engraved stones hidden in the river just for your group. Every guest keeps what they find.
A bonded pair of bald eagles nests on the property. They've been here longer than we have. Walk the river at dawn — if you're quiet, you'll see them working the thermals over the ridge.
Professional forager-led walks through the old-growth forest. Wild mushrooms, medicinal plants, edible finds. Book in advance.
Explore 1,080 acres and the surrounding Catskill back roads. Third-party e-bike rental partnership available.
On-farm trails through forest and pasture. The kind of walking that makes the city feel very far away.
Private chef and babysitter available for hire. The farm provides the setting; we can handle the rest.
A guided tour of the working farm, the botanical growing operations, and the food forest in progress. Ask us when you book.
The long farm table seats 16–20 under a permanent sailcloth tent, May through October. Fire pit seating for the whole group. The natural endpoint of every good day here.
Brian crafts handmade wood signs from his workshop in the small red barn on the property. Ask him about a custom piece to take home — something made on the farm, by the person who knows it best.
A World Record Attempt
In Fall 2026, we're planting 68+ contiguous acres as a fully designed seven-layer temperate food forest — in a single campaign. It will be one of the largest of its kind in the world, documented from day one.
Seven distinct layers — canopy trees through ground cover — over 50 species. Every plant chosen to grow here, feed something, and eventually stock the farm.
Walk it now and see what a future looks like when it's still small enough to understand.
